The idea is you do it with fat because then you can later easily remove the fat. The alcohol is good at absorbing flavors out of fat. And then in the on florage model, the fat plays a part because fat is also good at absorbing whatever from flowers. It was all a very expensive technique to get fancy perfume flavors for fancy people with a lot of money. Are cooks and people in the industry today supposed to know the history or is it plagiarism?
