The Importance of Nutrient Density in Food

Some of our fruits and vegetables are 50% or more less nutrient dense than they were 70 years ago. We've seen this decline in nutrient density owing largely to loss of microbial diversity in the soil that is a part of bringing these nutrients into plant matter and then into animals. So I'm curious if there is an interplay too of to your knowledge of not just our microbes and our brain but also the food that we're eating adding to this idea of satiety.
