Some of the Australian branches or pop-ups were placed into voluntary liquidation earlier this year, linking it to short leases due to expire and poor local management. Stefan Honker believes novelty in the industry is fine as long as restaurant owners are aware that the popularity might not last forever. "I think there was an element of it being a bit of a fad at times," he says. Do they get repeat customers? Does that even matter? I mean, that's a good question. The idea probably is that they don't get repeat customers."
