The Smell of Cogy
When you're growing cogy, your first experience is smelling it. The complex carbohydrates of the grain are breaking down into simple sugars. And so it smells sweet, it tastes sweet. Kept under the correct conditions, can be used over a period of months. This could constitute a whole sub field of ethno botany.
