The Difference Between a Flour Tortilla and a Sonoran One?
Lawrence Downs is co-author of Linda Ronstadt's book Feels Like Home, a song for the Sonoran Borderlands. He says food is part of culture in Arizona and he was shocked to find that they didn't have good tortillas when he first moved there. They're made out of flour and water and sometimes lard and they pat them out really big so you can wrap them and layer them like fine pastry. It's the technique you have to learn it from childhood and it's very labor intensive.
