In Brazil, Carlos Monteiro and his team noticed this transition where in 1990s obesity was the public health problem. And no one could explain why because people were buying less fat and less sugar by every traditional metric diets. So they looked at all the national food survey data is when they noticed that people were buying industrially produced versions of traditional foods. They were buying ready meals, emulsified bread, candies and cakes but these things had previously been wrapped in packets.
