Our brewing strains of Sacramisee-Serevisiae are crab tree positive. This means that its metabolism is dependent on its environment. In the presence of very high sugar concentrations, aerobic respiration in these organisms is completely repressed. However, if we drop the concentration of sugars and we provide oxygen, so there's available oxygen for the yeast to use, we can actually shift that metabolic balance from fermentation into aerobic respiration.
