"I love small plates. I think it's an important like trend to, to talk about," he says. "It gives you the freedom to just be like, instead of re firing all the crab bullets for the next course, I'm just going to give you two right now." He adds that in a restaurant where you can order everything to the server, basically the kitchen decides whenever it comes out and they'll come up with some order.
