I feel like you have different textures happening at once in this shape. The whole experience of eating it is very dynamic and varied. And now that the shape is thicker, the cooking time is long, much longer. With version one of my pasta, if you left it in an extra 30 seconds, it was mush with version two. It's not just how satisfying it is to bite into the pasta, it's how easy it is to cook the posta just right for maximum tooth sinc ability. For anyone who cooks it for 74 point eight three seven seconds is terrible. This thing is built to last.
