The Lacto Fermentation Process
Lacto fermentation just requires a basically clean pot clean, potable water. If there's not enough water to fully submerge the cabbage solids, you have to add some brine. The test for this is to see if your pickles actually go sour. And you can smell lactic acid, so you don't even need to taste it. It should smell sour. By then, all kinds of micro organisms will be at work eating your food and they will probably create disgusting smells. As long as you keep it in a clean place, watch out for mould on the surface and all that.
