In 1871 an Austrian Baron invented commercial yeast starters like the industrial process of developing those. Wow I feel like a lot of things connect back to World War Two. If folks heard the paper clips episode that was almost a World War Two history podcast that is less common with other topics but this one touches on World War Two yeah because it was especially a 1940s US thing where the Fleishman Company started doing an active dry yeast.
