Japanese brewers have been using coji to make beer for hundreds of years. Coji is an amylase-based enzyme that helps break down raw barley into fermentable sugars. The first ever Japanese coji beer was made in the 1990s, according to a local brewery. Jordan and Tom will talk about ways to upcycle brewing waste on next week's show.
