Wine makers just haven't been talking. We have this sort of myth which we don't have about Wolfgang Puck because he's so open. And there are several tenants like the whole idea of what the Australians call feral fermot, uninoculated. But I guarantee all you're really doing is letting other microbes come in and create complexity. It's a little bit of a crapshoot and sometimes you get spoiled wines, but you can make nice wines that way.
