I went to Davis and got these trees and learned modern e-nology, which it teaches that wine is a chemical solution. So at R.H. Phillips, I was using all this, all this minor stuff. And then I had the opportunity to work through the Ben Ziger family with Pasco River Ogean on a project making a single blend from vineyards all over the world. He taught me about the different kinds of tanning. And he's the guy that told me, you know, if I was growing Cabernet here, I'd let it hang to 27 bricks and then water it down. Because your grapes aren't ripe when ours are ripe bricks.
