i grew up in the industry with a lot of very talented people, and many of which have gone on to become sheffs. But i also can look round and see so many people that i would have thought would be a cheff, and they're not to day. They went to do something different, because it is a tough industry. There are so many opportunities now to learn right away. I mean, if you think back old world, any kind of craftsman or job where you had to learn a skill, you sort of started from the bottom and worked your way up.
