Why Do You Refrigerate Your Eggs?

Washed eggs do need to be refrigerated, probably. But unwashed eggs do not need to berigerated. There actually may still be a pretty good reason to refrigerate all eggs - but we'll get back to that soon. When an egg comes out of a bird, it has a protein coating on it known colloquially as a bloom and scientifically as a cuticle. It's nothing like the cuticle in your finger nails.
