Dr. Michael Crawley talks about how Ethiopian runners approach carbohydrates. In the rural areas where people start their careers, they ate a diet that all came from basically the land. They didn't eat anything refined like pasta or rice or anything like that. When they went to the city and were running at a higher level, they kind of adapted to eating rice and pasta. The general sort of eating lots of carbohydrates thing was definitely the same.
