The most important part of a recipe is the visual indicator. If it takes someone more than 10 minutes to caramelize onions they're like oh my god I must be doing something wrong and it's because you're using a much smaller skillet which means that evaporation is taking a lot longer. You're also on an electric stove instead of a gas stove and your equipment is different. So this is a PSA to the world is that the visual indicator is what you should pay attention to in a recipe, if it says until the onion are caramelized you do not stop until the onions are caramelized.
