How to Steam Eggs
Kenji Lopez-Alp: Does steaming raise the temperature of the egg at the same rate as boiling? He says steam doesn't transfer heat as fast because water is more dense and so there's more sort of energy per unit water, volumetrically. So I'm going to do a double blind experiment where you get someone else to cook the eggs and someone else to peel them. All right, I'll do that and we'll reconvene and I'm putting my money on me.
