In the late 90s, we talked about this, if you listen to this pod over the years, I think one of the single most important restaurants that's ever happened to America was Alondukas opening up at the Essex house. That was a scary opening. Were we ready for that decadent? So it's just built in this allergic disgustingness to excess in food. Why is that not the case for the general public to others? Because if it was successful, I think that would have changed so much of gastronomy for America at least.
