I was like so naive I'd never worked in a high-level kitchen before. It's the most chaotic crazy hard-working work environment I've ever been a part of. You're just like you're sweating all day it's so hot because it's outside and we cooked everything on that. When I left Heartwood I was very much like how do I figure out how can I keep cooking in my life in a way that's not gonna do that? That has been an ongoing question for me since then.
