The Importance of Being Present
I'd served foie gras lobster wagyu beef, all of it over the course of my career. I'd never seen anyone react to anything I'd served like they did to the hot dog. And when I explained it, I said, I want to make sure you don't go home with any culinary regrets and they freaked out. Too often in customer service, we let these self-imposed standards get in the way of us given the people around us that things that will make them the most happy.
