A German scientist named Edvard Bookner won the 1907 Nobel Prize in chemistry for an advanced and understanding cell-free yeast fermentation. After him another probably more famous French scientist Louis Pasteur. He laid out basic theories behind yeast fermentation in 1876. There was still more research to do from there as recently as 2007.
