Food Sticks to Everything in the World
When a piece of food hits the surface, what is happening that's causing it to stick sharp? Well, for one or two reasons. One is the mechanical jigsaw puzzle, especially innolik, a cast iron pot which is filled with lots of little voids and cracks between the crystal grains. The other reason is sixas chemically, that there are chemical bonds that hold egg proteins to each other and meat proteins to eachother and starch together. Sometimes the pan can be made out of a material which, ah, the, usually it's a protein or starch, can actually break the chemical bond and actually stick to it.
