In Valencia, there is one paella for each day of the year. There are loads of different ingredients dependent on what you are. I generally wouldn't do a lobster paella, right? I would like it soupy. So we have a few on my black rice with a squid ink and cattle fish...I love it mellow. Yeah. You know, and you know, we all have our favorites, but it's about finding your own.
