It has been shown to increase the production of amyloid beta plaques which aggregate and form these plaques outside of neurons and glial cells in the brain. Stress also has a profound impact on the gut. The gut is actually the major source of inflammation in the body. So diet is not the only factor that affects inflammation in the gut as well.
