Nitrate and the Enterosalivary Pathway

Historically nitrite and nitrate were viewed as either inert degradation products of nitric oxide, or worse as potential carcinogens. But 20 to 30 years ago, it really started to emerge that they can be oxidized by anaerobic bacteria under our tongue. If you use powerful mouthwash to kill off those bacteria, you can limit flux through this pathway. And if after ingesting something like beet juice, you constantly spit out your saliva rather than swallow it, you can block the effects.
