When you're feeling good, decide to not do the extra set or extend your workout. The next workouts will be appropriately guided to be more difficult in a more meaningful way. Some days are supposed to be easy and when you enter easy, it's like, yeah, that's just right. You can tell if the day is supposed to be hard or not by looking at the workout profile.
