NOTE

Salt: A World History

New Yorkos had a vested interest in seeing the Saudi contract scrapped./nSo of course, did Daniel Ludwig./nAnd so two of my favorite Ludwig stories are right next to each other in the book./nThis is how he starts the largest salt company in the world./nAnd in the middle of the story is my favorite sentence in this entire book./nSo it's this project that's gonna happen./nIt says it's on Mexico's Pacific coast about halfway down the Baja Peninsula./nLocated there were huge underground deposits of brine./nConcentration of salt in the water were around 30%./nNearly 10 times that of sea water./nBy the simple process of pumping this brine to the surface and letting it stand in pools where the hot sun could evaporate the water, one could produce millions of tons of salt./nThis is what Ludwig is doing./nProduced millions of tons of salt which could be gathered and exported./nThe economy of the procedure appealed to Ludwig./nAll he had to do was bring up the brine and nature would do the processing./nThe main problem was the lab./nThis part of Mexico was nearly unpopulated and he would have to import workers and build places for them to live./nHe has to build essentially a small town for this to happen./nThe Baja coast was so remote that he would have.
