Full grown sugar cane is tall with thick, soft stalks containing sweet sap, which was initially chewed as a snack in New Guinea around 8000 BC. Over time, sugar cane was domesticated for its energy density and taken across the Pacific and Southeast Asia. Eventually, people learned to extract sweet sap from cane and crystallize it into sugar, with the first sugar-like substance appearing around the eighth century BC in India.
