Preserving Nutritional Value of Fermented Foods

Exposing fermented foods like tempeh and miso to high heat can destroy the probiotics, but the nutritional benefits of the fermented food are not nullified. Fermented foods also create exo polysaccharides during the fermentation process which are prebiotics that are easier for the gut to process. To preserve the probiotics in fermented foods, it is recommended to wait for the food to cool before adding them. This way, the probiotic content can be retained. Probiotic supplements can be beneficial for overall gut health.
