Living in starch-based countries like Southeast Asia and the Mediterranean, I've noticed that both sugar and bread can trigger addictive behavior for some people. Quitting sugar doesn't necessarily mean getting off the addictive hit, as many switch to bread or cookies instead. While some individuals can tolerate grains better than others, grains can still trigger an addictive response. However, the context in which grains and bread are consumed also matters, as having them on an empty stomach elicits a different insulin and dopamine response compared to pairing them with vegetables or protein-rich foods.
