People used to tell me to keep things simple, like meat and potatoes. But I believe in the elegance and thoughtfulness of sushi, which may look uncooked but is actually a higher grade of food. I recently took a friend to a sushi spot and realized they were used to rolls with chicken and avocado. I felt bad for giving them such an experimental menu. It reminded me of how the quality of sushi lies in the freshness of the fish and the skill of the chef. It's like the movie Hero Dreams of Sushi, where different places serve the same thing but with varying levels of expertise. Sushi is truly a special experience.
