In the U.S., canola oil dominates due to its high levels of monounsaturated and polyunsaturated fatty acids, similar to soybean oil. In contrast, sunflower oil is particularly rich in polyunsaturated fatty acids. Dietary fats are primarily made up of three types of fatty acids: saturated fats, which have no double bonds; monounsaturated fats, which contain one double bond; and polyunsaturated fats, which have multiple double bonds. Understanding these categories is crucial for making informed dietary choices and assessing their impact on health.
