Nutrient Density Declines with Modern Agriculture

Many commonly consumed fruits and vegetables today, even those bought from health-conscious stores, have significantly lower nutrient density compared to a century ago, with estimates indicating a reduction to a third or a quarter of their original value. Tomatoes, for instance, show drastic differences in nutrient availability between heirloom varieties and commercial ones, illustrating a disparity that can be as much as six times. Additionally, farmed salmon lacks essential omega-3 fatty acids compared to wild salmon and even grass-fed beef, highlighting major nutritional gaps in modern farming practices. While these issues are concerning, they are preferable to the alternative of widespread starvation.
