Studies showed that a low-nitrate diet with extreme red meat consumption led to a significant increase in N-nitrosocompound production. Further research comparing red meat consumption with and without additional iron indicated that heme, present in red meat, was the primary factor driving the production of genotoxic carcinogenic compounds.
