The U.S. food system is heavily influenced by perverse incentives that favor processed foods over healthier options. Agricultural subsidies, which are intended to support food production, predominantly benefit commodity agriculture that serves as feedstock for processed foods. Consequently, almost all food subsidies contribute to the prevalence of unhealthy eating habits. Furthermore, the food stamp program reflects this bias, with about 70% of its expenditures allocated to processed foods, and a staggering 10% directed towards sugary beverages, which significantly contribute to health issues like diabetes.
