Experimenting with fruited beer on wet hops instead of a neutral barrel has worked well to create contrast and diversity in beer offerings. Using different fruits like peaches and watermelon has been successful in creating fruit-forward beers. All fruits used are whole fruits grown in Tennessee, adding a seasonal and hand-processed element. However, using dark beer or Centennial wet hops in experiments has not been successful.
