Industrialized seed oils undergo a deodorization step that produces trans fats, which are harmful as there is no safe level of artificially manmade trans fat consumption. Despite partially hydrogenated vegetable oils being outlawed, these trans fats are still present in grain and seed oils due to the deodorization process. The overconsumption of these oils, which were not part of the human food supply until a century ago, has significantly increased, with some types like soybean oil rising by up to 1000%. When these oils are heated, they generate toxic aldehydes, including acrylene, which is neurotoxic, mutagenic, and found in pollutants and in the brains of people with Alzheimer's disease.
