Elie is a Hospitalist at a leading hospital in Houston's Texas Medical Center and is a board-certified physician in internal medicine and nephrology. His practice focuses on caring for acutely ill patients admitted for a myriad of medical conditions. Like most of us, Elie has wrestled with a host of health issues including back pain, high blood pressure, insulin resistance and full on Dad Bod. After being frustrated with conventional approaches, Elie took a radical departure from mainstream medicine and used lifestyle to completely alter his health. This first-hand experience shifted his professional interests to include nutrition as his primary tool to combat chronic metabolic and autoimmune diseases. While he'd already been using his personal time to help patients harness the power of food to reverse their chronic conditions for years, treating more than 100 COVID patients over the last 6 months was a game changer. Carnivore Success Story by Brad Marshall

Brad Marshall is the author of the Blog Fire In A Bottle and the creator of The Croissant Diet. Mildly obsessed with food and its history, his work focuses on trying to place current ideas about diet, including keto and carnivore diets into the framework of traditional Dietary patterns. For instance, the French diet before 1970 combined flour, sugar, butter and wine and the population was lean. Brad wrote The ROS Theory of Obesity which posits that ROS generation in the mitochondria of fat cells could provide the mechanism that explains why a traditional Chinese peasant diet - low fat with 85% of calories from starch; a French diet combining butter, wine and flour and a modern keto diet could all be expected to produce leanness but combining flour with polyunsaturated fats is a recipe for obesity. The core idea comes from the Protons thread of Peter Dobromylskyj's blog Hyperlipid. Brad tested this hypothesis with his dietary experiment The Croissant Diet. Brad is also the founder of Firebrand Meats, which is dedicated to producing pork and poultry products that are low in Linoleic acid, the n6 polyunsaturated fat (PUFA) whose intake has seen a dramatic worldwide increase in the last century. Animals cannot make PUFA and so we can create pork and chicken that is nearly free of them. You are what your animals eat. Brad has a genetics degree from Cornell, a certificate from The French Culinary Institute, has studied cancer at Memorial Sloan-Kettering Cancer center and worked as a programmer for the Berkeley Drosophila Genome Project. He spent the last 15 years raising rotationally grazed pastured pork on his farm in upstate New York while running a butcher shop, local food restaurant and USDA inspected meat processing facility. Allen Williams is a 6th generation family farmer and founding partner of Grass Fed Insights, LLC, Understanding Ag, LLC and the Soil Health Academy. He is also a partner in Joyce Farms, Inc. He has consulted with more than 4000 farmers and ranchers in the U.S., Canada, Mexico, South America, and other countries, on operations ranging from a few acres to over 1 million acres. Allen pioneered many of the early regenerative grazing protocols and forage finishing techniques and now teaches those practices and principles to farmers globally. He is a "recovering academic", having served 15 years on the faculty at Louisiana Tech University and Mississippi State University. He holds a B.S. and M.S. in Animal Science from Clemson University and a Ph.D. in Livestock Genetics from LSU. He has authored more than 400 scientific and popular press articles, and is an invited speaker at regional, national, and international conferences and symposia. Major areas of research and business focus include soil health, cover crop/livestock integration, adaptive forage & grazing management, high attribute pasture-based meat production, and alternative marketing systems. Allen and his colleagues specialize in whole farm & ranch planning based on the concept of regenerative agriculture. Their approach creates significant "value add" and prepares the landowner for multiple enterprise/revenue stream opportunities that stack enterprises and acres. This approach allows for enhanced profitability and/or investment value. They routinely conduct workshops and seminars across the U.S., Canada, and Mexico.
