Fruit-Oatmeal Bake Recipe
3 apples (or any fruit you like)
2 bananas (or any fruit you like)
1 any other fruit (optional)
4 T cinnamon
4 T vanilla powder
3 cups water
3-5 cups oatmeal

Chop fruits and cook in large pot with water till mushy
Add cinnamon and stir
Heat off
Add uncooked oatmeal and stir well
Put into large baking dish
Bake 350 about 35-55 minutes
~~~~~~~~~~~~~~~~
Fruit cook, stirring during process about 15-20 minutes.
Semi thick and stew-like consistency.
When you add the uncooked oatmeal you want a really thick consistency.
Add mixture to a large baking dish about 1 inch high. (snack bar thickness)
Bake until brown (look at bottom of pan) and slightly over-cook to get an outer crunchy yet inner pliable texture.

Dr.John Scharffenberg, who is almost 100 years old, has been a Professor of Nutrition Loma Linda University for over 63 years.
Dr. John Scharffenberg was born in Shanghai, China in 1923. He graduated from the Loma Linda University medical school, class of 1948, from Harvard’s School of Public Health (MPH), 1956, he was the nutritionist on the secretariat of the Interdepartmental Committee of Nutrition for National Defense at the National Institutes of Health, and has been a Professor of Nutrition at Loma Linda University for 63 years. He has also been a consultant to the Centers for Disease Control in Atlanta, GA. on infectious diseases. He has been director of the San Bernardino, California Health Department which is the largest county geographically in California. He has also been the director of the International Nutrition Research Foundation in Riverside, California.

First 16 years of life spent in China.
Graduated from high school in Michigan in 1940 (president of my class), took premed in Takoma Park,
MD, then the U.S. Army put me through medical school at Loma Linda University, Ca. Graduated in 1947which in those days was called the class of 1948. Got master's in public health from Harvard University 1956 (was elected by the faculty to the Delta Omega Society).
Served two more years in the army to pay for their putting me through medical school, the first year in Fort Ord, CA, the 2nd years asAmerican Military Advisor to the Chinese military in Taiwan.
Taught in Loma Linda University as a professor of nutrition for 62 years.
Worked in San Bernardino County Health Dept. where I became head of the department.
Was director of the International Nutrition Research Foundation in Riverside, CA.
Was on the secretariat of the Interdepartmental Committee on Nutrition for National Defense located at the National Institutes of Health in Bethesda, Md.
Was Assistant Director of the Department of Health of the General Conference of Seventh-day Adventists.
Started the Public Health Education Center in Bakersfield, CA from funds due to the selling of the San Joaquin Hospital for 30 million dollars.

Karen's Story
After growing up as a thin normal child and teen, I started gaining weight in my twenties. Then when I got pregnant with my oldest son, I gained 50 lbs and never really looked back. I gained another 20-25 lbs with each of my boys. By the time my third son was born, I was over 200 lbs. At 5'5", that was 75 lbs overweight. Every time I tried to lose weight, I would succeed for a couple of months but would always regain what I lost and a few more lbs extra.
In the 90s, I tried phen-fen and lost 70 lbs only to once again, gain the weight back plus a little more. By the time the 2000s rolled around, I was 100+ lbs overweight. In 2004, I was at my heaviest at 260 lbs.
In 2011, I had a stroke after eating a low low carb diet and not being able to maintain it. It left me with left side weakness including left hemisphere blindness.
Finally in 2019, I discovered a whole food plant exclusive diet and the secret to finally losing the weight that had plagued me. I also found Chef AJ and eating sofas free and I never intend to go back to meat and dairy.
Last year, I had an undiagnosed excruciating pain and while I continued to eat wfpe, I let Taco Bell hook me in. I did the reboot last year and started to regain my desire for sofas free and understanding how important it is. I am slowly losing the 15 lbs I gained and I also re-examined my why. Being wfpe-sofas free has been a great way to eat!

Tropical Island Kebabs
(makes 3 to 4 Servings)
Ingredients
Kebabs:
1 tub of firm tofu, drained and cut into 1-inch pieces
½ red onion, cut into 1-inch pieces
1 red bell pepper, seeded and cut into 1-inch pieces
1 cup pineapple, cut into 1-inch pieces
8 ounces Cherry Tomatoes
½ cup Red Grapes
Sea salt and black pepper to taste
Sweet and Sour Sauce: (makes 1.5 cups)
¾ cup Water
½ cup date paste
¼ cup of apple cider vinegar
¼ cup of soy sauce, low sodium
3 tablespoons ketchup
2 tablespoons cornstarch or arrowroot
Cilantro
Directions:
For the kebabs: Preheat a grill or stovetop grill pan.
Cut the tofu into cubes and place on parchment paper with sea salt (optional) and pepper and bake in oven at 350 degrees for about 15 minutes. Set aside.
Skewer all the vegetables and the tofu in any arrangement that you would like. You can brush the sweet and sour sauce on but with the sugar it tends to burn so I brushed it on after the vegetables were grilled. Rotate skewers with tongs until browned on all sides. Remove kebabs from the grill and serve over rice. Drizzle more sauce if needed.
Cilantro Rice
(Makes 3 to 4 servings)
Ingredients:
1 cup long grain Brown Rice
2 cups Water
½ teaspoon sea salt (optional)
1 tablespoon lemon juice
2 tablespoons finely chopped fresh cilantro
2 scallions, trimmed and thinly sliced
½ cup slivered almonds, toasted
Directions:
In a medium saucepan, combine rice, water, sea salt and bring to a boil. Reduce heat to low and simmer, covered, until rice is cooked, and water is absorbed.
Remove from heat, and let sit, covered, for 15 minutes.
Add lemon juice, cilantro, scallions and almonds to the rice and fluff with a fork.
You can also cook the rice in your Instant Pot and then add in the other ingredients after opening the lid.
