GT Dave on Life, Kombucha and Medicinal Mushrooms

A breathtaking conversation with GT Dave, entrepreneur and founder of GT’s Kombucha creator of the Global Bottled Kombucha category on living a vibrant life, bringing real kombucha to the world, fermented foods, mushrooms, plant medicines, future health trends and more     Bio:    GT Dave is an American businessman who is the founder and CEO of the Kombucha company GT’s Living Foods/ GT's Kombucha. In the late 1990s, he was the first to put kombucha on store shelves and his company currently owns 40% of the U.S. kombucha market.   Dave was the first to put kombucha on store shelves. His first sale of kombucha (which he marketed as GT's Kombucha) was to Erewhon Natural Foods in 1995, when he sold two cases (24 bottles) which nearly sold out in the first day. From his bedroom, he would call buyers, distributors and store owners, using different voices to pose as different employees.   He continued to homebrew kombucha in his family home, which quickly outgrew the kitchen and expanded to the living room, and would sleep from 4 p.m. to midnight and work while his family slept. His mother Laraine helped him market the product by setting up tasting tables and sharing her cancer story.   GT's Kombucha continued to grow and in December 1997, when he was selling 30 to 50 cases per day, he rented a 2,000-square-foot industrial space in Gardena and began to hire employees. That was when Whole Foods Market called to inquire about distributing his kombucha. He initially hesitated, but ultimately decided to accept their offer, stressing the importance of preserving the integrity of his product. GT's Kombucha was now in stores across the Southwest and he rented another 2,000 square feet space in Gardena. The demand continued to grow as Dave expanded to more regions and he struggled to keep up with demand but as he insisted on brewing the traditional way with close oversight over every batch.   GT's Kombucha later rebranded as GT's Living Foods and now produces over one million bottles per year in its 100,000-square-foot campus in Vernon. Dave has declined multiple acquisition offers and remains the sole owner of GT's Living Foods which is worth over $900 million and owns 40% of the U.S. kombucha market.   Topics discussed:   GT’s Origin Story GT’s first Kombucha Brew Brewing Kombucha is like growing a plant GT’s Proudest offering The spirituality of Kombucha "Kombucha loves simplicity"  Basic Kombucha Recipe Kombucha Fermenting Time Second Fermentation -“Permission to Play" Mothers and Daughters Mutant Kombucha Cultures Food as Medicine Plant-based eating Immersion in Nature- “Nature is the Greatest Healer" GT’s morning routine Morning Smoothies Meditation GT’s exercise routine Gratitude Empathy Homebrewing to Commercial Enterprise Staying true to Kombucha Keeping the Integrity of Real Kombucha and Kefir GT’s and Hannah Crum- Kombucha Standard of Identity Short Cut Kombucha State of the Australian Kombucha Market GT’s concerns about the Kombucha Market GT’s thoughts on Kombucha and alcohol GT’s health trends for the future Medicinal Mushrooms Water Kefir- More beneficial bacteria than Kombucha Wild Coconut Yoghurt Water Kefir - Bifidobacteria and Tryptophan Benefits of Water Kefir Mushrooms and PTSD Plant Medicines and Mental Health GT’s Top Health Tip   Brought to you by:   Nourishme Organics your online shop for Fermented Food Cultures and Home Fermentation Equipment   https://www.nourishmeorganics.com.au/     Microbiome Stool Testing, Deuterium Testing and Nutritional Consulting https://www.nourishmeorganics.com.au/collections/nutritionist-consultation       Connect with GT Dave   Instagram- https://www.instagram.com/gtdave3/   Connect with Kriben Govender:    Facebook- https://www.facebook.com/guthealthgurus/   Instagram- https://www.instagram.com/guthealthgurus/   Youtube https://www.youtube.com/channel/UCq5KxLvGIY4r6SqNaAphEUw   Gut Health Gurus Facebook Group: https://www.facebook.com/groups/nourishmeorganics/   Deuterium Depletion Support Facebook Group: https://www.facebook.com/groups/347845406055631/   Download links               If you enjoyed this episode and would like to show your support:   1) Please subscribe on Apple Podcasts, give us 5 stars and leave a positive review     Instructions:   - Click this link  https://itunes.apple.com/au/podcast/gut-health-gurus-podcast/id1433882512?mt=2   - Click "View in Itunes" button on the left-hand side - This will open the Itunes app - Click the "Subscribe" button - Click on "Ratings and Reviews" tab - Click on "Write a Review" button   Non-Itunes users can leave a Google Review here: https://goo.gl/9aNP0V     2) Subscribe, like and leave a positive comment on Youtube   https://www.youtube.com/channel/UCq5KxLvGIY4r6SqNaAphEUw?sub_confirmation=1   3) Share your favourite episode on Facebook, Instagram, and Stories 4) Let your friends and family know about this Podcast by email, text, messenger etc   Thank you so much for your support. Sharon Flynn on Ferment for Good: A Love Affair with Fermented Foods

A fascinating conversation with author of Ferment for Good, and Founder of The Fermentary, Sharon Flynn. We discuss Sharon’s love affair with fermented foods, helping her sick daughter get better from gut issues ,the challenges around making fermented foods commercially, homemade vs store bought ferments, Sharon’s easy Carrot Brine recipe, milk Kefir the probiotic superfood to transform your gut health and much more.     Bio:    Australian-born Sharon Flynn was living in Tokyo, teaching English at a university, more than two decades ago when she first learned about fermenting. An elderly Japanese neighbour and her family introduced Sharon to the joys of miso, tofu and eventually fermented vegetables. Many city moves later - she married a financier who moved with work regularly - Sharon found herself in Seattle. That's where she really caught the fermenting bug. She belonged to a Community Supported Agricultural Scheme and received so many little cucumbers that she recalls she had to learn to pickle! She moved on to cheese, yoghurt and bread - and was truly hooked after meeting the man regarded as the master of fermentation in the US, Sandor Katz.     In the background here, her third daughter became quite ill. By this time the family had moved to Brussels and she found that antibiotics had left her daughter's system devoid of essential bacteria. Sharon says she read up more and more on fermenting - every culture has a version of some sort - and her daughter eventually regained her zest and good health. Fast forward a few years and Sharon found herself in Melbourne, this time sans her husband, with her three daughters. She learnt to make kefir, made her own ferments and started sharing these with friends. She tried to teach her friends, but quickly discovered that what they really wanted was for her to make it for them! So began her little business, The Fermentary.     Her products quickly won a following, alongside acclaim in the restaurant world. Now, with new partner chef Roger Fowler, her business is not so little; they sell both wholesale to leading Sydney and Melbourne restaurants and retailers, as well as direct to their customers at farmers' markets. As well, Sharon conducts regular workshops in Victoria and beyond. Sharon was also fortunate enough to spend a fortnight in late 2015 undertaking an intensive, advanced fermenting workshop with Sandor Katz (described by The New York Times as one of the unlikely rock stars of the American food scene) at his home in Cannon County, Tennessee.     Topics discussed:   Sharon’s origin story Sharon’s love of fermented foods The Danish pig farm The Japanese Fermentation Odyssey Pickles at the Jewish Neighbourhood in Chicago Community Supported Agricultural in Seattle- Jubilee Farms Meeting Sandor Katz Making Sourdough and Cheese Science Experiments Moving to Belgium A sick daughter and antibiotics Putting bacteria back in the gut The GAPS book Introducing Fermented Foods "That Drink”- Water Kefir "Die off" Reaction Teaching people how to make Water Kefir Dealing in Ferments Names on tags Running a Small Batch Fermenting business Fake Fermented Foods- Kefir and Kombucha Getting the real deal- bacterial diversity and real carbonation Fear of alcohol vs healthy low alcohol  Health Tinctures The evolution of fermented foods Making your Fermented Foods Clarity in Food Label of Fermented Foods Challenges around the manufacture of real fermented foods Pickles vs Fermented Foods An easy fermented food to start with- Brined Carrots Recipe Flavouring a brine with herbs and spices Preventing Kahm yeast Fermenting with joy and wonder Bringing back our old traditions Sharon’s top tip for Gut Health Functional Peptides in Milk Kefir Flavouring milk kefir Tryptophan and Milk Kefir Milk Kefir before bed Roger’s heart burn story Pets and milk kefir Appetite suppression of milk kefir   Brought to you by:   Nourishme Organics your online shop for Fermented Food Cultures and Home Fermentation Equipment   https://www.nourishmeorganics.com.au/     Shop fermentation cultures and accessories online today    Microbiome Stool Testing, Deuterium Testing and Nutritional Consulting https://www.nourishmeorganics.com.au/collections/nutritionist-consultation     Grab a copy of Sharon Flynn book - Ferment for Good       Connect with Sharon Flynn   Website- https://www.thefermentary.com.au/   Connect with Kriben Govender:    Facebook- https://www.facebook.com/guthealthgurus Instagram- https://www.instagram.com/guthealthgurus Youtube- https://www.youtube.com/c/Nourishmeorganics?sub_confirmation=1 Gut Health Gurus Facebook Group: https://www.facebook.com/groups/nourishmeorganics/ Deuterium Depletion Support Facebook Group: https://www.facebook.com/groups/347845406055631/   Download links               If you enjoyed this episode and would like to show your support:   1) Please subscribe on Apple Podcasts, give us 5 stars and leave a positive review     Instructions:   - Click this link  https://itunes.apple.com/au/podcast/gut-health-gurus-podcast/id1433882512?mt=2   - Click "View in Itunes" button on the left-hand side - This will open the Itunes app - Click the "Subscribe" button - Click on "Ratings and Reviews" tab - Click on "Write a Review" button   Non-Itunes users can leave a Google Review here: https://goo.gl/9aNP0V     2) Subscribe, like and leave a positive comment on Youtube   https://www.youtube.com/c/Nourishmeorganics?sub_confirmation=1   3) Share your favourite episode on Facebook, Instagram, and Stories 4) Let your friends and family know about this Podcast by email, text, messenger etc   Thank you so much for your support. Beginning her PhD in 2005, she examined the association between women's diets and their mental health, focusing on depression and anxiety.   What Felice found fundamentally changes the way we think about mental and brain health, and the importance of the nutrition-mental health link.   Her book, Brain Changer explains how and why we should consider our food as the basis of our mental and brain health throughout our lives. It includes a selection of recipes featuring ingredients beneficial to mental health. It also highlights the practical things we can do to help prevent mental health problems in the first place and offers strategies for treating these problems if they do arise.     This is not a diet book to help you on the weight scales. This is a guide to good habits to save your brain, improve the lives of future generations, and to optimise your mental and brain health at every stage of life.   Topics discussed:   Prof Jacka’s mental health challenge The link between nutrition and common mental disorders Pyscho- immunology Neuroscience Hippocampus, Mental Health and Diet Quality of Diet and Mood A review of epidemiological studies around the world Early life nutrition and emotional health Diet: a leading cause of premature death in men Mental Disorders: Leading societal disability burden Depression response to medication and treatment Diet and reduced risk of depression Diet quality and hippocampal volume Randomised Control Trial and Intervention Study Challenges The Smiles Trial Challenges Social and Dietary Support for Depression The Smiles Trial Results- First step to Nutritional Psychiatry https://www.ncbi.nlm.nih.gov/pubmed/30591059 Cost-saving of treating depression with diet Diet, exercise and giving up smoking International guideline for lifestyle psychiatry Dietary strategies to improve mental health Vegetable diversity and fibre Olive oil and Fish The problem of Ultra-processed foods Gut and Brain Health Sleep Quality and Mental health Obesity and mental health Adoption by the medical community What is step Zero in Nutritional psychiatry? https://www.ncbi.nlm.nih.gov/pubmed/31480057 The influence of “Big Food" Risk factors and lower lifespan of people with major psychotic disorders Other risk facts impact depressed cohort “Lifestyle medicine" Preventing depression in kids Creating the right environment through policy Food marketing and Big Food Protecting the health of our children: mental and cognitive Felice’s depression and anxiety disorder The impact of exercise on sleep and mental health The flow-on effect of improving diet Cooking and preparing food Professor Ted Dinan podcast- experts on Gut-Brain Axis https://podcast.nourishmeorganics.com.au/professor-ted-dinan-on-the-psychobiotic-revolution-mood-food-and-the-new-science-of-the-gut-brain-connection Modulating the Gut Microbiome for Mental Health Diet - a key driver of gut microbiota composition The significance of plant foods for gut microbiota modulation Your gut needs a diversity of fibre, polyphenols and good fats “ Eat real food, not too much, mostly plants" Short-chain fatty acids, fibre, the immune system, G-protein coupled receptors and epigenetic activation https://www.nature.com/scitable/topicpage/gpcr-14047471/ Gut Microbiome diversity and mucin degrading bacteria Loss of microbiome species and associated risks Neurotransmitters and the microbiome Tryptophan, GABA and serotonin Milk Kefir and GABA Fermented Foods and Metabolites The impact of fermented foods RCTs on fermented foods as a treatment for anxiety and depression Functional Peptides and Kefir Fermented Food and Mental health Study: https://www.ncbi.nlm.nih.gov/pubmed/30415609 Book: Brain Changer: The latest cutting edge science on how diet can affect your risk of anxiety and depression, and influence the health of your brain https://www.nourishmeorganics.com.au/products/brain-changer-the-good-mental-health-diet-by-prof-felice-jacka Felice’s top tip for gut health and mental health   Brought to you by:   Nourishme Organics- The Gut Health Superstore   Milk kefir is an amazing fermented food that may improve mental health. Prof Philip Hugenholtz on Metagenomic Stool Analysis for Optimal Gut Health

We have a groundbreaking discussion with Prof Philip Hugenholtz co-founder of Microba, a company specialising in Metagenomic Stool Testing using DNA based sequencing to analyse the microbiome. We cover the history and application of DNA based sequencing to classify and identify micro-organisms, using the technology to improve health outcomes on a personalised level, the future prospects for precision medicine, IBD, what a healthy microbiome looks like and much more.     Bio:    Professor Hugenholtz is a microbiologist who has made contributions in the field of culture-independent analysis of microorganisms. He discovered and characterised numerous previously unrecognised major bacterial and archaeal lineages each with greater evolutionary divergence than animals and plants combined. He has participated in the development and application of metagenomics, the genome-based characterisation of microbiomes, which has revolutionised our understanding of microbial ecology and evolution. He has made several discoveries in environmental and clinical microbiology sometimes overturning decades of misdirected culture-based studies.   Topics discussed:   Phil’s Origin story Microbial Classification and Morphology  The Development of DNA based sequencing technology Carl Woese- 16s rRNA - ribosomal RNA sequencing https://en.wikipedia.org/wiki/Carl_Woese Did we evolve from ancient Archaea?
