Today, he will be interviewing Rocco ToscaniMore about today’s guestAt the end of the 60s my father Oliviero Toscani had enough courage and vision to build his own house in Casale Marittimo: a tiny hamlet on coastal Tuscany, up on the hills and a few kilometers from Bolgheri. He purchased a small farmhouse with some land all around and brought two horses. Every year he used to invest all his savings buying land. He did not believe in bricks but he did believe in the land. He was damn right! My father has always been a determined, subversive and visionary creative. These very qualities made him achieve an exceptional career and build a farm of indisputable beauty.After planting more than 4000 olive trees, raising Appaloosa horses, Cinta Senese breed pigs, Angus cows and homing pigeons, we felt like our project was missing something: a vineyard. 12 hectares of amphitheater-shaped vineyard at 350 meters above sea level with a breathtaking view on the Tirreno Sea.Thus, I, Rocco, was born and raised in this beautiful land which one never wants to leave and where one always wants to return. I’ve learnt the country life-style, its cycles, rhythms as well as its strengths and weaknesses. I’ve learnt how to recognize animals, every piece of land and every plant individually. My job as a photographer took me abroad to study and work. Eventually in 2014 I realized that this country had always been my real passion, so I decided to go back home to Tuscany.Today, with the precious help of the winemakers Attilio Pagli and Valentino Ciarla, and agronomist Stefano Bartolomei, the winery has become an artisanal production where the care for our environment is at the first place, and a sustainable production are the base of how I conduct the vineyard.My goal is to optimize the strengths of the vineyard and its terroir by producing wines that had never been experimented before in this area, making wines that reflect the features of their own grapes from their crisp freshness to their fascinating force. I’ve managed to change the cultivation method of the vineyard from a traditional one to the organic wine production by bringing back useful bugs instead of using chemical methods. The same goes in the cellar, low intervention wines with very little use of sulphites. Ep. 1826 What does 'natural' mean in wine? Pt. 3 | Everybody Needs A Bit Of Scienza

Welcome to Episode 1826. Today's episode is a recording of Prof. Scienza's seminar with Gabriele Gorelli MW, titled 'What does 'natural' mean in wine? How to engage wine lovers with science.' This is part 3 of 4.The seminar’s abstract:The European Commission has prohibited the use of the words “natural wine” on labels in Europe. Why? Primarily because there exists an underlying misunderstanding about what “natural” actually refers to in the wine sector. One side of the argument sees “natural” wines as those with zero interventions (i.e., no chemicals, no sulfites, no pesticides, etc.), while forgetting that the harvest, fermentation and bottling processes all involve human intervention. The other side of the argument says the only wines that are truly “natural” must be those made from wild vines with no genetic selection over time – and these wines simply do not exist.While both arguments can be viewed as extreme, both have at heart a desire for sustainability, care for the environment and attention to the health of consumers. Recent trends, especially among young/new wine consumers and often fuelled by social media, point to an emphasis on the desire for “wholesome” food and beverage products that demonstrate a respect for nature and consumers’ health. These trends are not new, but the escalation of focus on these issues has caused a battle with existing consumers who value and recognize the key sensory references basic to the traditional evaluation of wine. Producers of “natural” wines contribute to the confusion by ignoring both sides of the argument and insisting that their winemaking choices stem solely from their beliefs about how wines should be made.Is “natural” wine a myth? A marketing ploy? The darling of social media? If we focus on the “naturalness” of wine, do we risk foregoing ground-breaking research on precision viticulture, technique and technology that could represent the most effective way to enhance the terroir while respecting environmental and economic sustainability? How do we combat fake news and alarmism? We must address the great shortage of trainers and communicators who combine technical skills with the ability to make themselves not only understood, but also to fascinate those who listen or read.If you want to learn more about the Professor:The one who checks all the facts and regulates when we mistakenly type “Verdicchio” in place of “Vermentino.” Attilio Scienza is a full professor at the University of Milan in the Department of Agricultural and Food Sciences where he teaches courses on genetic improvements to the vine; he also teaches Viticulture in the Master’s program of the University of Turin in Asti. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. The event is a key annual  reference point for wine producers and wine professionals from around the world, providing an opportunity to network, develop and expand their wine business worldwide.Abstract: Wine consumption in France has changed a lot in the past decades. Alongside a fall in consumption in terms of quantity, there has been an increase in consumption in terms of quality. There have been deep changes in habits and in people who are buying wines as well: yesterday’s drinkers are not today’s drinkers, and these changes can be advantageous for Italian wines to develop in France.Today, France is the second biggest country in terms of wine consumption, after the United States and before Italy. Since France is a wine-producing country, the majority of wines consumed there are French, while only 6 % of the wines French people drink are produced outside of France. This 6% may seem a small amount, but it is worth 900 million €. Italy is the favorite wine-producing country in wine stores (private and little chains) and restaurants (Italian restaurants, but also French restaurants).Today, producing organic wines made from local grapes is a plus for wineries that want to enter the French market, so wineries should communicate those aspects on their websites and social networks. Price can be a critical issue since Italian wines can be more expensive than French wines due to import charges. Offering different wines with entry-level, mid-level and high-level price ranges might help.More about today’s speaker: Fanny Breuil is from Angers in the Loire and have always been into wine. She studied agronomy engineering and oenology. First, she worked as a winemaker (France, Italy, Chile) and then as a salesperson for a wine importer in the USA. In 2008, She founded her company Genuine Wines with a deep willingness to help winegrowers located in lesser-known or underappreciated wine regions (but that had great potential). She started with Jura and Emilia Romagna. Since then she has been helping them with their export markets as part of each team. These are French and Italian domaines.
