Dr. Todd Callaway: Feed Ingredients and Rumen Microbiology | Ep. 26
Today, we are joined by a distinguished guest, Dr. Todd Callaway, an associate professor from the University of Georgia, who brings with him an extensive background in rumen nutrition and microbiology. Together, we explored the delicate balance of microbial populations in cattle and how diet can drastically influence animal production and food safety. We also talked about the intricacies of feed additives like monensin โ unraveling its accidental discovery and profound impact on reducing methane and ammonia production, and improving feed efficiency in beef cattle.
"The biggest technical challenge remains: understanding what's actually happening in the gut with these microbes. Observing the interactions between a compound's effects, microbial actions, and the final product is an expensive and difficult process."
What you'll learn:
- (00:00) Highlight
- (01:50) Introduction and professional background
- (06:50) Use of monensin in the livestock industry
- (16:04) Alternatives to monensin in livestock feed
- (22:53) Food safety concerns
- (26:47) Major challenges in food safety
- (34:47) Conclusion: the final questions
Meet the guest: Dr. Todd Callaway has joined the faculty of the Department of Animal and Dairy Science at UGA. Todd is a ruminant microbiologist who grew up on a small horse, dairy, and beef farm and received his B.S. and M.S. degrees from the University of Georgia in Animal and Dairy Science in 1993 and 1996, respectively. He then went on to receive his Ph.D. degree in Microbiology from Cornell University in 1999. As part of his research focus, Dr. Callaway focused on the intestinal microbiome and the impacts of diet on the microbial population and host susceptibility to pathogen colonization.
