Is the Lemon Juice a Good Choice?
Lemon juice doesn't have nearly as much flavor as the zest. Never use a garlic. Press thinly sliced cloves and put them in with the oil or whatever. If neither of those work, i would just use shallots. They're not identical to garlic, but you'll get some of that flavor. And if you don't break the garlic down, ye, cause when you rupture the garlic, you get that enzyme activity which releases an after-taste. Ouch! That's called pase de mince.
