The Paris Brest by Philip Conticini

The Paris Brest is a ring of shoe pastry filled with praline cream and sprinkled with slivered almonds. It was created around 1900 as a tribute to the famous Paris Brest bicycle race. Murielle spent several years perfecting her own version of the paribrest. She wanted to create something light and airy. And finally she perfected the dough for the shoepay street.
