The Importance of Dietary Assessment in Epidemiology

Many of the 16 prospective cohort studies that were looked at many of them didn't even have a validated dietary assessment method or at least their validation was not reported on the initial study. The relationship between saturated fat and heart disease or cardiovascular disease is not a straight line relationship between the two but it's mediated by the impact of that nutrient on a physiological process so as an example sodium is related to heart disease and stroke through its effects on blood pressure and hypertensionaturated fat is related to the development of atherosclerosis coronary heart disease and cardiovascular disease through its impacts on the causal risk factor for atherosclerosis LDL cholesterol.
