Soy leg hemoglobin is the only plant source of a heme protein that was at sufficient scale. It's structurally extremely similar to myoglobin, which is the heme protein and muscle tissue. The amount of leg hemoglobin in the US soybean crop would be enough to match all the heme and all the meat consumed in the US.
