I Couldn't Sell Razors on the Beach
We need to eat more fish, especially the fish around our shores. More of those unglamorous but totally delicious bivalves. How we convince people to be more adventurous about their fish eating is a serious focus of Dr David Willers' research. We're moving towards things like mussel cakes or clamfish fingers. In South Wales, there has been such a culture, a very old one. And I'm now with a man who's both documented that tradition, and is in the forefront of persuading us to revive it.
