How Did You Learn to Ferment Cakes?

When i first set up tisreorganic am. I was 27 and had yet to kind of define exactly what i was doing. What i learnt very early on was that flowers benefit hugely by sitting in something in liquid, so does fruit and spices. So when people eat my cake they immediately go, this tastes like home,. or this taste like something i had as a child. And they can actually digest the cake more easily.
